Job Profile

The Executive Chef will be responsible for setting up Menu requirements for various services

•   Contract and retail catering operations, select and develop recipes, standardise production recipes to ensure consistent quality, establish presentation technique and quality standards, plan and price menus
•   Ensure proper equipment / operations maintenance, train and manage kitchen personnel and supervise/coordinate all related culinary activities and ensure proper safety and sanitation in kitchen
•   Executive Chef may cook selected items or for select occassions

Qualification Required & Experience

Candidate Profile

•   Minimum 5 to 7 years experience in contract environment
•   Relevant culinary qualifications
•   Overseas experience with multicultural food preparation ability will be an advantage
•   Have a solid track record of developing and implementing cost control measures
•   Previous experience with Controls - Food and labour costs, demonstration cooking, menu development and pricing and culinary team development is a must
•   Ability to travel to remote sites and stay for short periods
•   Possess a solid background of training both culinary and service personnel while delivery a quality consistent product.
